How to Brew the Gozen Way
Heat water to 70–80°C. Never boiling — high heat destroys L-theanine and creates bitterness. Cool boiled water for 5–7 min.
Use 1.5–2g (¾ tsp) per 80ml. Sift through a fine mesh sieve to eliminate clumps before adding water.
Whisk with a bamboo chasen in a brisk W motion for 30–45 sec until foam forms. Drink within 2 minutes. Be present.

Regular green tea is brewed from whole leaves that are then discarded. Matcha is made from shade-grown leaves ground into a fine powder — meaning you consume the whole leaf and receive its full nutritional content, including significantly higher levels of L-theanine, EGCG, and chlorophyll.
Japanese green tea is steamed after harvest, which halts oxidation quickly and preserves a bright, grassy, sweet flavour profile and higher chlorophyll content. Chinese green teas are typically pan-fired, producing a more toasty, nutty character. Japanese varieties also tend to have higher L-theanine content due to shade-growing practices.
A standard 2g serving of ceremonial matcha contains approximately 60-70mg of caffeine — similar to a shot of espresso but modulated by L-theanine, which smooths the caffeine curve, producing sustained alertness without spikes or crashes. Traditional sencha contains 20-30mg per cup.
